Condensed Milk

Whether it’s fudges, slices, or something else entirely, condensed milk is a must-have ingredient. But instead of stocking up on cans, why not try making your own? Nut butters 

There’s nothing like the taste of fresh nut butter. In just a few minutes, you can go from whole nuts to creamy, dreamy nut butter with endless flavour combinations. Want to mix things up? Chai-Spiced Nut Butter 

Ingredients 

300 g raw cashews 

55 g coconut oil 

2 tsp sugar of choice (eg coconut, rapadura, brown) 

¼ tsp ground cardamom 

1 pinch ground allspice 

1 pinch ground ginger 

1 pinch ground nutmeg 

1 - 2 pinches sea salt 

1 tbsp vegetable oil, to cover 

Preparation 

  1. Preheat oven to 180°C. 
  1. Place a baking tray on top of mixing bowl lid and weigh nuts onto it. Spread in an even layer then bake for 10 minutes (180°C). Set aside to cool completely (approx. 15 minutes). 
  1. Place cooled nuts into mixing bowl and mill 1 min/speed 10. Scrape down sides of mixing bowl with spatula, then mill for a further 1 min/speed 8. 
  1. Add all remaining ingredients, except vegetable oil, and blend 30 sec/speed 5. Transfer into a sterilised jar (see Tips). Top with a layer of oil until just covered and use as needed.
