Solid copper canelé moulds will set you back a small fortune and come with incredibly fussy care instructions. Our modern take on this French classic is so much more affordable and easier to use and clean.
Your fresh-baked canelés de Bordeaux will keep for a day – the perfect excuse to devour the whole batch of 12 from your canelé mould! But they freeze beautifully, so you can bake and freeze for your party guests, or for your very own daily treat with coffee.
We recommend handwashing with a soft cloth, mild soap and warm water as soon as the canelé mould is cool enough to handle, then dry immediately with a tea towel and store upside down. Give it a quick soak in warm water to loosen stuck-on batter and serve using wooden or silicone utensils. To protect the non-stick surface, avoid using metal utensils or knives, abrasive cloths and cleaners or highly alkaline detergents. Some discolouration may occur with use over time.

This is a great canele mould, it has the weight and wall thickness needed to conduct the heat evenly for a great batch of caneles that are chewy on the outer layer and that unique texture on the inside. I was sceptical as I tried others with limited success, but this is the bomb! Loce it! Finally able to make beautiful caneles!!!!
Definitely not non stick. Should be noted on the packaging instructions that it needs to be extremely well greased. I have been making canelès for years in a silicon mould with no problem. They stuck badly in this mould.

This works well and are good sized caneles. I pre heated the pan first to make sure they were nice and caramelised. Only reason for giving 1 less star was because it stains easily, but won’t effect function.
Absolutely delicious cakes, not to mention how fancy they look. 😃
