And they don’t just look incredible – that first crunchy bite of the crispy caramelised crust, sinking into the fluffy custardy middle, is wow-factor heaven.
Although famously fiddly to master, we’ve made the fine French art of the artisan canelés or canelé cake so much simpler. We sourced the best quality carbon steel and canelé mould design, added our signature rose gold non-stick coating, and triple-tested our canelé recipe to give you perfectly consistent baking results every time, with no fuss or white puffy bottoms!
Solid copper canelé moulds will set you back a small fortune and come with incredibly fussy care instructions. Our modern take on this French classic is so much more affordable and easier to use and clean.
Your fresh-baked canelés de Bordeaux will keep for a day – the perfect excuse to devour the whole batch of 12 from your canelé mould! But they freeze beautifully, so you can bake and freeze for your party guests, or for your very own daily treat with coffee.
We recommend handwashing with a soft cloth, mild soap and warm water as soon as the canelé mould is cool enough to handle, then dry immediately with a tea towel and store upside down. Give it a quick soak in warm water to loosen stuck-on batter and serve using wooden or silicone utensils. To protect the non-stick surface, avoid using metal utensils or knives, abrasive cloths and cleaners or highly alkaline detergents. Some discolouration may occur with use over time.

Well and truly exceeded my expectations and can't believe how easy it is to make perfect canele.
Canele are expensive to buy in fancy-pants bakeries but now I can easily whip up a batch and all my friends think that I'm a baking queen. I made 3 dozen perfect canele for my mum's birthday morning tea and they were all gone within minutes to rave reviews. This tray gives the perfect texture too - crispy on the outside and custardy on the inside.
